The fall has come and pumpkins are back on our tables. Yesterday we ate Eunice's pumpkin muffins and Charlotte's pumpkin pie after our Bible study. The recipe (metric system), for about 12 muffins:
2 eggs
150 g soft butter
150g brown sugar
200 g wholemeal flour
1 bag baking powder
1 bag vanilla sugar
200 g pumpkin flesh cut in small pieces
Optional: 150 g grounded almonds, cinnamon, icing sugar
1 - Stir butter and sugar with an electric mixer till you obtain a white and creamy mixture. This step can take 5 to 7 minutes.
2 - Add the eggs. Stir.
3 - Add the flour, the baking powder and the vanilla sugar. Stir.
4 - Add the pumpkin pieces, stir and put the dough in muffin tins.
5 - Put in the oven (200°C) for 20 to 30 minutes.
